What is one dish that you feel confident you can make right now in high capacity that can sell and can be replicated?
Let's say the food truck is already equipped for the food you will make, to remove that variable.
Your location may or may not be a factor in selling.
I haven't really mastered anything except making cheap food taste good. I might base mune around a single food or price gimmick like "Only ____" or "$1 ____".
I would say Just Jambalaya.

Gumbo......can make in huge a$$ quantities w my eyes closed. Serve w rice, side of potato salad, bayou-style, and a hunka French bread. Would also sell it by the quart or gallon, ready to freeze.

Boudin, by the link, grilled, smoked, boudin tacos, boudin burritos, boudin egg rolls, boudin balls, boudin breakfast burritos, boudin poboys, burgers ...etc.
