One of Bucktown's finest restaurants. Ever since they landed on The List, I've boycotted.

Among one of the best in Nola. In addition, Frank is a great guy and gives back to the community.

Absolutely. He's a big supporter of local businesses, as well. It's a pleasure to dine there especially when he comes out of the kitchen to visit.

Great article. Don't know anything about Frank personally, but love following him on social media. You can tell he's a good hearted person.

Guy who wrote that article is a waiter at Galatoire’s and a damn good chef in his own right. He also hosts a NO themed music show on WWOZ on Thursdays from 11am-2pm.

He used to post on the old Tom Fitz food forums. I think his handle was Michael from OZ or something like that. I didn't realize he was a waiter at Galatoire's, though.

uh....is that really a "classic"? It sounds like it would taste good but isn't that more of a modern fusion take on gumbo?

I used to buy tickets for Frank at the cooking classes he held at the old plantation on esplanade years ago- forgot the name or the cooking class. Loved his cooking, personality, friendliness, and genuinely interested in the audience had to say. I learned a lot from him. He would then give out the recipes, part of the program. Great guy!

I went to something similar in the LGD where he was the chef. It was definitely a memorable experience and he was such a personable guy.

How on earth is an okra seafood gumbo with sausage a “fusion” dish? Everybody I know makes seafood gumbos with sausage or ham in them......the separate seafood only gumbos are less common than you think. In SE LA (not the prairies of SWLA), seafood is used freely, and combined in many ways. Nothing fusion about smoked sausage in a seafood gumbo, with or without okra. I know a bunch of black creole cooks who also put fresh sausage (chaurice) into a seafood gumbo too.

I’ve had plenty of okra, sausage and seafood gumbos. Never in my life have I had any gumbo with ham in it.

I’ve been going to Brigstens probably since close to the beginning and it has always been a favorite. Marna runs the front and you will always talk to her and Frank is on a station every night they are open. They deserve all accolades.
