Other than smothering down rabbit in a black iron pot, anyone have any recipes? Thinking about doing a red gravy. Thoughts.

Sauce Piquant is good. Is it a swamp rabbit or cottontail? The former takes a good while to become tender.

They're from hard ground so I wouldn't consider them swamp or marsh but they're bigger than your typical cottontail.

Might try that Indian Crock Pot Pork recipe on the bottom of the link using rabbit.

They're swamp rabbits, not cotton tails. "Swamp rabbit" is a species of rabbit, not nessecarily the terrain it hails from. If it's bigger than a cottontail it's a swamp rabbit (cane cutter). They require slow cooking down imo or they will be too tough. Black pot gravy, sauce piquant, rabbit and dumplins (after a parboil), or something like that. I would take TreeDawgs sauce piquant recipe and do that if you're wanting something red.

My Mother in law makes meat balls with them.... a lot of work for meat balls.

Cook them in a creole mustard cream sauce. Lots of recipes but I found this one after a quick search.

The other night I made rabbit enchiladas with home make corn tortilla and home made Salsa verde.

I cooked a swamp rabbit in a gumbo the other day. It was pretty good.
