why is jarred salsa so terrible?

i think i've tried every jarred salsa under the sun and ive yet to find one that isnt a fancy version of pace picante. i really dont understand whats so hard about this:

1. make a kickass restaurant quality salsa
2. put it in a jar
3. sell
4. profit

This is why I buy salsa to-go from restaurants. Same price, fresh, and infinitely better in flavor. Superior or Trejos ftw.

Yeah the stuff I like that is jarred is local stuff. Cant remember the exact name of it but its just a guys name. Mikes or something similar.

I actually like some jarred salsas, but I do agree that they are completely different from restaurant salsa.. to the point where I hardly consider them the same food item.

Why not stop by a restaurant and grab a pint of salsa every so often? There are Mexican joints on every corner it seems, and all have pretty decent salsa. Plus, they give you a bag or two of their homemade chips when you order salsa.

Easy to answer this one. Preserving good fresh salsa is a pain in the arse to get from production, jarring, to the store, and then making sure it keeps long enough for most people to eat it.

Most companies can't do it without ruining the flavor.

Anyone got a really good standard generic Mex restaurant recipe? Always like trying new ones, but I don't want any fancy shite added, just a good generic recipe.

For the same reason Hidden Valley ranch dressing out of the bottle tastes like arse compared to fresh made ranch using the Hidden Valley packets.

They need to put a lot of shite in bottled version so it can sit in your fridge for months on end.

This is my favorite salsa that I have found in LA



the central market/HEB and Bucee's of the world have equal or better salsa's

it's really not terrible hard to make your own.

There are tons of good jar salsas. Look up Clint's and Mateo's.

because it is pastuerized for canning; ie: it is cooked. what you are getting in a decent restaurant is fresh/not cooked
