I got a brand new smoker not being used today. In laws are hosting and cooking the meat. I'll be firing it up this weekend and I have Christmas duties so look forward to meat fest.

My bird just went in around 11am after dry brining overnight, soaked wood consists of a blend of cherry, apple and hickory and the smoker is holding at a nice 315 which is close to ideal for poultry. The bird is 13 lbs so it should be done around sundown. Drip pan underneath consists of water, apple juice, mirepoix, bay leaf and other herbs which will make a killer gravy. Here is our prime rib! I watched it in the SV water since 6am if that counts! I know I didn't have to go outside to smoke it in the 30 degree weather but we don't like turkey.

By the way, good job on that turkey. That does look really good! Happy thanksgiving!

Mine won't go higher than about 270, which is disappointing and may mess up timing. I got it rolling before too, not sure what the problem is.

Oh well, gotta let it ride. 2.5 hours in and just threw on the first butter baste. Looking good on the outside.

My Weber Smokey Mountain is running hot.

Sitting just around 400 with all the vents closed on the bottom.
Not a huge deal though, poultry can take the heat.

Damn. I have to flip the door or move the lid to the side to get enough airflow in my WSM to go much over 300. Your door may not be sealing up tight if it is getting over 400 with vents closed.

I figured out that I had a pan in there to catch the drippings and was giving a false reading.

It was 325-350 though.
