Threw a 11 lb packer on the Kettle about an hour ago. Snake method with oak chips and cherry chunks. Used about every square inch of my Kettle for this one...might be time for an upgrade soon

Got a 4.5 lb butt that I'm really wanting to smoke today, but radar shows some weather rolling in sometime mid afternoon. Can't decide

Would it mess me if to smoke in the rain? 22.5 in Weber kettle using snake method.

Get your smoke for a couple hours then throw it in the oven at 225.

First attempt on my own. 9 lb brisket on a 65 dollar smoker I got off of Amazon . Will see how it turns out.

First attempt did not turn out perfectly. Good seasoning, but still a bit tough. I did not wrap in foil for the last few hours. Definitely will next time.

That $65 smoker gave that thing a nice smoke ring.

I'm doing a couple racks of St Louis style on a masterbuilt electric tomorrow. Only my 3rd smoke, first time doing ribs. Through my reading, I think I've settled on the 3-2-1 method. Any tips??

My first smoke was a pork butt that turned out pretty well but I know those can be more forgiving.

JMHO but it looks like it went a bit too long or that was one mighty lean brisket to begin with, no fat left.

While not a foil fan that looks like it would have benefited from being pulled a bit sooner then wrapped and let rest a while.

It is really good looking first brisket though, you will perfect your own method soon enough, I would definitely chow down on it.

Did a 6 lb pork shoulder yesterday. Turned canned pork n' beans into baked beans, and Mom did potato salad (Yes, the yeller mustard kind).

Put the pork on right at 11am, pulled it off the smoker right at 6pm. I should have taken a pic of the bone, smallest I've ever seen in a shoulder, like 2 inches across and 3 inches long maximum.
