Put this Slab of beef ribs on at 9am should be done around 5pm. I love the smell of pecan in the morning.

I did a pork belly yesterday and have some wings soaking in a brine for later this afternoon. Was going to do ribs but backed out.

Around 15 lbs of chicken gonna hit the pit at 3 ish. Half will be sauced, half will be nekkid.

Got some spare ribs on the BGE. Used agave nectar as the binder. We'll see how that turns out.

Got that same one from the same place. Had to seal mine though cause it was leaking from everywhere. Did you find the stock thermometer to not be accurate?

I had read online that it wasn't. So when I was picking up some other stuff at Ace Hardware, I got a new one. I actually never checked the thermometer that came with it. Boiled some water and found that the new one I got is about 12 degrees off. Should probably check the old one too.
Pit leaked some, but most of the smoke was making it through the stack. Not enough that I am going to freak out too much. Temperature fluctuations were a bit bad, but I think I've learned some lessons.
