I think Prudhomme is the better chef and Wilson is the better entertainer.

As far as actual cooking skill, Prudhomme is far superior.

I agree. And it's not close. They each have their place but aren't even in the same category imo.

Wilson was a storyteller who cooked other people’s recipes while drinking wine and telling Boudreaux & Thibodeaux jokes. Prudhomme pioneered seasoning spice blends, and took the New Orleans food scene to a whole new level with his Cajun and Creole dishes.
Years ago I attended an event honoring Ms. Ella Brennan. She confirmed that Paul Prudhomme was the most influential and renowned chef in New Orleans. Prudhomme put Commanders Palace on the map of NOLA fine dining.
Simple question: if given a house warming or Birthday gift, would you rather a cookbook from PP or JW ?

One was a world-renowned chef that was single-handedly responsible for the near extinction of a species because of a single delicious technique and the other was a safety man with a fake accent that told shitty jokes in front of a camera.

Shortly after Katrina a group of us went to K Paul or whatever they call it....he came rolling in on his scooter to some brass music waving his hands..someone at my table tried to give him a high five and he acted like he was getting a bucket of piss thrown on him

Wilson was born in Roseland, La. on the north shore in Tangipahoa Parish---not exactly a hotbed for Cajun food and culture.
His father was Welsh and mother French and he was employed as a safety engineer for years. He traveled all over La. giving safety lectures at refineries.
That thick Cajun accent was more a front than for real.
