Rice then gumbo on top. Scoop of potato salad in the bowl near the side. Scoop a little potato salad with every spoon.

Exactly how I eat it. I love cold potato salad with hot gumbo

I've put chicken n sausage gumbo on top of mashed potatoes (no rice). Close enough?

It was excellent.

I'm going to have to try this than.

The only problem though is I don't make it that often because my wife can't eat a good authentic gumbo. Her stomach is too sensitive. So I have to cook something different for her (she's disabled).

I do put hard boiled eggs in 1 kind of gumbo I make: "Leftover duck and hard boiled egg gumbo."

I put a peeled sweet potato in my gumbo now. Used to do potato salad until I discovered how much better the sweet potato was.

Potato salad and sweet potatoes go WITH gumbo, not IN gumbo.

Rice and gumbo in a bowl. Potato salad or sweet potato on a plate next to the bowl (also serves as a bone holder). Dip bites of the potatoes into the gumbo if needed.

There wasn't a gumbo my grandmother made that didn't have either potato salad, sweet potatoes, or both on the side.

I've also seen people put hard-boiled eggs in gumbo, and in the Opelousas area gumbo is served with a sweet potato.

I grew up in Opelousas and did not know this wasn't common practice until just a few years ago

Even my 5 yo daughter says she can't eat gumbo without potato salad in it.

Apparently it's pretty common

I was brought up doing that. Potato salad, baked sweet potato, a boiled egg, and rice are all acceptable items to place in your bowl of gumbo.

Let's face it. A good gumbo is good any way you serve it!
Now I'm hungry for gumbo and sweet potato and paotato salad.
