Who puts potato salad in gumbo?

I have a copy of the Prudhomme family cookbook.
It seems to me one of the oddest eating habits of this family is their practice of putting potato salad in gumbo.
Is it common practice to put potato salad in gumbo?
Another thing I noticed about this book is that there are no recipes for collards, turnip greens, or mustard greens. I wonder why they were prejudiced against these items.

I do...It has to be a good homemade potato salad though and not that mustardy tasting store bought crap...A dollop of good p-salad in a turkey gumbo is delish.

I love potato salad in gumbo, particularly if there is some kind of diced pickle or pickle relish in it. Sometimes I just put a bite at a time in, or I will put in a small scoop. I don't stir it to incorporate it, I want a bite of potato salad in a spoonful of gumbo.

Occasionally it is a different stroke than rice in gumbo as the starch. Rice has just one flavor element to it, whereas the salad has an abundance of little things is does to the gumbo.

Rice then gumbo on top. Scoop of potato salad in the bowl near the side. Scoop a little potato salad with every spoon.

Speaking on behalf of the Count, I think he would go with crunchless tater salad willingly or short grain rice. How badly did he piss off the Yardbird, as he has been absent for months?
The tater salad adds alot of flavors to the gumbo because its many ingredients along with texture differences for that same causation. It can also add a temperature contrast if chilled and dropped into hot gumbo.

I love potato salad with my gumbo. It is very common, from what I've seen.
I've also seen people put hard-boiled eggs in gumbo, and in the Opelousas area gumbo is served with a sweet potato.

I've seen people crack eggs in the gumbo while it is on a low simmer and they poach, mainly old timers

My mama did the poached eggs in gumbo thing, but that was after we'd eaten most of the chicken out of the gumbo and she was stretching that pot of leftovers as far as she could.
I love hard boiled eggs in shrimp stew. I've never made it that way, but have had it on some plate lunches. Good stuff.

I've had gumbo all my life. My grandmother was from the MS gulf coast, so we had it quite often, but until I moved to SELA, I had never heard of this. Surprisingly, to me, it's really good.

I usually have it on the side and dip it into the gumbo.

Yeah, that's what I do because I still like a dollop of rice in it as well.
