Conecuh is great but if you ever pass through crystal springs, ms, go buy a bunch of sausage a Wilson’s meat market. It’s some of the best pork sausage I’ve ever had.

Conecuh sucks. It’s better than hillshire farms and eckrich, but overall, it’s a poor facsimile of decent Cajun smoked sausage. I figured this thread was about other types of sausage, like Italian, German, etc.

I've fond childhood memories of a sausage shop when I was no more than seven or so. The sausage maker's name was Otto, straight from Germany, and he didn't speak a lick of English. His wife ran the counter and interacted with the customers. Various sausages were hanging about everywhere. My favorite was Mettwurst, which is minced pork smoked and cured. I wonder if any place like that still exists in North America...a German immigrant producing nothing but sausage. The smells of the place and the samples were incredible.
There's also Usinger's blood tongue sausage which is very good if you're looking for something out of the ordinary.

Will second on Wilson’s in Crystal Springs. Bring a cooler full back to Atlanta three times a year after hunting trips near there

Dietz and Watson does some good commercial sausages. Shiner does some Czech sausage and brats that are good. Prasek also does a good smoked sausage

Not a Cajun or Italian sausage but it is a smoked sausage. Have you tried Kiolbassa brand sausages? Made in Texas and I usually get it at Sam's Club. They have an "Organic" version you can get at Costco too.
Give it a try! I love their Beef?Jalapeno sausage!

I agree and disagree. They have a skinny link one about as round as my thumb that taste oustanding on the grill. I think on the package it even says taste great on the grill. But the bigger, rounder, normal size sausage link for some reason is not as good particularly when you use it in gumbo or jambalaya. I think that natural casing they use gives that normal size sausage a weird consistency and it’s greasy unless it’s grilled.

I like Conecuh alright on the grill. But it sucks when it’s in a pot of something. Too greasy and gives off a weird flavor.

Totally agree. Taste weird in a pot but that skinny rope one sure taste good off my grill.

Conecuh is better than anything else I can get at a grocery store other than when Sam's actually has Rabideaux's.
