White rice or brown rice

Is white generally softer than brown after cooking

Yes.
Rice starts off brown with germ and husks intact. Milling strips that away until pearly white rice is left. While white rice is less nutritious it cooks faster, gets softer and stores unrefrigerated forever. Brown rice retains some oils and will go rancid in about a year unless stored in freezer, which it seldom is. That said brown rice today has become more similar to white in terms of cooking time and softness. I guess it is getting a newer type of milling. Finding an old-fashion, firm nut-like brown takes a bit of careful shopping.

Yes, and takes a bit longer to cook too. It usually takes me about 40 minutes or so to cook brown rice on the stovetop.

I think the word yall are looking for is more nutritious not more healthy. But like any food combined with other foods and in moderation could be healthier.

They started serving brown rice in school when Michelle my Belle was in the White House, and now the kids say they won't eat the gumbo because it is nasty.

Brown rice is gross.
On one of my deployments the chow hall contractor couldn't get white rice for almost 3 months for some reason.
I didn't eat rice during that time period.

I'm the same way. My mom started using brown rice occasionally a few years ago and I'd rather just eat the beans by themselves than with brown rice if I can't have white rice

Basmati rice has a similar glycemic index to brown rice, and if that is something that does concern you, rinsing/washing your rice will remove some excess starch that can increase blood sugar spikes.
