White perch recipes?

I caught a mess of them yesterday. What are some good recipes? fried or otherwise. Most of them are decent sized, big enough to filet. Here's what I'm working with

OP; mustard, louisiana fish fry, and hot peanut oil. Cool on a cooling rack over some old newspaper or paper towels and enjoy with fries, red onion, cole slaw, and some hush puppies.

Mustard is ok and what I grew up on, but I now prefer hot sauce and milk or just hot sauce. Regardless, you were correct on your pronunciation of the fish. Don't listen to these T-Bobs.

Yes, I have. But not from anyone south of Alexandria. And to be technical, a white perch is a totally different species of fish from a sac au lait.

Looking at that it is a white perch. Unfortunately they are native to the Great Lakes, Chesapeake, and the Hudson not here. COmpare that fish in your pic to mine, then to a Crappie/White Perch/ Sac-a-lait. It's a dadgum white perch, but not our kinda white perch. La politicians .

Fair enough. If we're going to get technical those are Black Crappie. Since there are no actual White Perch in Louisiana, I'll call them sac au lait.
