Mustard/fish fry recipe is the way to go.

It's definitely not a white perch (technically). But who gives a shite. They're delicious

Yep. Scale and fry in seasoned cornmeal. Eat the tail. Love them whole.

It's sacalait. My dad fish's almost exclusively for this now that he's retired. Sacalait are also known as white crappie or black crappie.

Best eating fish out there. Mustard, hot sauce, and fish fry. That's really the only way to eat them.

Parents had us over a couple weekends ago and we ate some fried sacalait and bream.

Damn! Beautiful catch there! I love sacalait!!! May be my favorite fish to fry.
Haven't caught them in years and I miss that lease we had up in Angie. Had a bunch of ponds filled with those puppies.
