White beans or Red beans

I pretty frequently have beans on Monday and alternate between the two. It’s very cheap and easy to make and gets the family through the first couple of days of the week for dinner. What is your favorite? If I could make my white beans as good as my grandmother used to make them before she passed I would make them every week. Any special additions to these two dishes that I might not have tried?

I prefer white beans. Regardless of which I'm cooking, I always add sausage, tasso and ham to it.

I've got a friend who lives outside Raceland and his wife always makes white beans on Monday and adds shrimp to them.
I prefer red beans with sausage, ham, pickle meat or ham hocks for flavoring but I'm not going to turn my nose up at some good lima beans. Besides, limas cook up quicker than red beans, so less work to make them.
And like you, I wish I knew how my grandma made them since they were the best I've ever tasted and I can't duplicate that taste to save my life.

White beans for me. Try frying some specs and put white beans and rice over a few fillets.

Some kind of smoked meat is what puts them over the top. I use smoked sausage and smoked turkey necks or ham hocks.

We always eat beans on Mondays, too, but I rotate among red, white, black and pinto.
The black & pinto I'll mash up for refried beans for later in the week if we have any left.
My white beans aren't as good as my grandfather-in-law's used to be ... but they're edible.
We use salt pork for the white beans and pickled pork for the red.

My red beans always come out better.
But I still take white beans out to the dance sometimes.
They’re so damn similar in taste to me, but look so different (color). I essentially cook them both the same way most of the time. Trinity, sausage, tasso, and stock.

I like to simmer smoked hocks in chicken stock to use in certain bean dishes and soups.

Agreed. I love red beans, but white beans have that special flavor that can't be beat.
I've never added tasso before. Always sausage and pickled meat for me, but I will throw this in next time for a meat trinity
