re: White beans or Red beans

you cooking those beans outside under the trees? what is up with all of those leaves in there

I cook mine with different meats so they come out different to me.

Red gets smoked sausage and more vinegar taste.

White, I smoke a ham with apricot glaze and use the leftovers, so sweeter taste

I like red, wife likes white.

Make a light roux. smush the beans against the side with a spoon after cooking for some time.

Any pork product in white beans is delicious. I had some left over pulled pork that I chopped and put in the pot. It was really good.
