I think it depends what I am cooking for me but either coated cast or magnalite.

I like coated cast iron. It makes cleaning up easier. I also have copper but I'm finding I don't use them as the coated cast iron.

Coated cast iron cooks the most evenly

I do love my magnalite roaster though

You let that simmer for a long time and it will taste bitter.

i love my coated cast iron. but, i'm the only one that does in my family.

can't go wrong with cast iron though. i think that the favorite of most.

I have gone exclusively to magnalite . And I stored my cast iron at my camp .

Slowly switching everything to Made In. Someone gave me a basic skillet and it's the best piece of cookware I have ever used.

The only thing I wouldn't cook in cast iron is anything cheese based.

As for red gravy, if your pot is seasoned what's the problem? I've made sauce piquante and courtbouillon in mine plenty of times.

I have a cast iron dutch oven that I use for roux based dishes since I find it easier to gauge the darkness of the roux against a darker metal. It is also my normal cooking pot.

I have a tall magnalite style pot that I use for dishes that are too big or too acidic for the cast iron pot. Homemade stocks, etc.

Don't currently have an enameled cast iron. Wouldn't mind it, but would only use it if I were making smaller versions of the stuff I make in the magnalite. Which I don't think would be too often. So I'd take it as a gift but really don't feel like I need to purchase it myself.
