Little bit of dale’s and Montreal steak seasoning

Mix + cook when meat is at room temperature

Dash of chili powder and cumin. Not too much though or it will just taste like taco meat.

1.25lbs chuck, untrimmed
.75lbs sirloin, fat on
2oz beef marrow, derived from roasted bones & cooled
1Tbs seasoning mix
1each egg

Seasoning mix ratio
1.5 kosher salt
.25 black pepper
.25 granulated garlic

Coarsley grind both meats and place in refrigerator for 10 minutes to rest. Remove meat from fridge, add marrow, & sprinkle with 1Tbs of season mix. Grind meat again with medium plate. Whisk egg and gently fold into meat. Scale into 4oz portions and place in fridge. Leave for 10 minutes. Form 4oz portions into thin 1/4" patties, season both sides with seasoning mix & head to the grill. Grill really hot & fast to keep the inside reddish-pink

No offense but that picture looks very underwhelming for the effort detailed in that recipe.

Meatballs have egg... they're not meatloaf. The egg isn't necessary but, it provides structure with added protein, richness from added fat, & moisture from added collagen.

I used to finely chop a little bell pepper to blend into the burger. Then baste with soy while grilling. Great burgers. FTH’s

If eggs in a burger are ok with Gordon Ramsey then they're ok with me.

To me it's meatloaf once you start adding things like breadcrumbs and over season it to where you can't taste the beef.

I did one with beef/veal/pork once that I had on hand. (Was buying all 3 for an Italian meat sauce.

A little different but I enjoyed it.

I've done pork only and that was good too. I mixed in some gorgonzola crumbles and chives for that one.

I don’t handle the meat much, just kinda form them gently. Season with salt, cracked pepper and Worcestershire sauce. Before I cook the burgers, I cook down some onions and jalapeños in the cast iron. Sometimes I’ll melt down a little pepper jelly with a small splash of water and pour that over the top of my burger.

Some of you guys know how to frick up simple ground meat.

Chuck, salt and pepper. Don’t pack the hamburger, don’t smash it, etc. It ain’t fricking difficult.

For me, good quality ground meat and salt and pepper. Julia Child sautes shallots in butter and cuts it into the meat. On occasion, I do that.
