Canadian bacon is where it is at if I can add a couple drops of Louisiana hot sauce. If not, beef/hamburger.

I'm a big fan of good spiral ham that's been put in the food processor to chop the hell out of it and then give it a good chance to brown/crisp it up under the broiler.

The other thing I've found that makes a pizza that much better than even all of the meats is to use pepper jack cheese and, when using Mozzarella at home, to make sure it's whole milk mozzarella. Somehow Wal-Mart started selling whole milk mozzarella cheaper than the skim stuff, and it's pretty darn good. But pepper jack cheese is pretty much the best.

On a related topic, do you want your toppings on top of or under the cheese.

I put a light layer of cheese first, then the toppings, then more cheese on top. I don't completely cover the toppings with cheese though.

Answer to OP - mushrooms, preferably baby portabellos.

If ordering takeout, my two to-go orders are:

Pizza 1 - pepperoni, pineapple, jalapenos

Pizza 2- Italian sausage, onions, green peppers, mushrooms

A good, quality sausage is great... not that crap they put on at places like Pizza Hut and Papa Johns

up in Pittsburgh I used to get pizza with hot sausage from a place called Ricci's that was awesome. So I'll say hot sausage.

I was reluctant at first but green olives are way better than black olives on a pizza.
