Can't have just one. Extra sharp cheddar is one I use most often. Love gorgonzola, feta, goat, manchego, gruyere, pepper jack, swiss, parmigiano reggiano. Different applications.

I have asked before and nobody seems to know for sure but what kind of cheese is "queso" at a mexican restaraunt. Yes. I know queso means cheese in spanish. I just want to be able to eat that at home with a beer every now and then.

We normally have Gouda or Smoked Gouda in the house, both bought in bulk from Costco.
For burgers I like Pepper Jack or Cheddar.
Other favorites are blue cheese, truffle cheese, Muenster (especially for grilled cheese), Fontina, Mancheco, and good feta or Mexican queso fresco.

Before I got married my favorite was very sharp cheddar. For a sammich it was Swiss.
