Kung pao is a tricky one because if it’s too “authentic” it’s mostly veggies and tastes like shite. I like the one at Pei Wei and PF Changs (although why pay double the price there for what you can get at Pei Wei if there is one nearby).

Miss Shirley’s in NOLA has an Udon noodles with crab meat which is to die for.

It’s hard to find a place that serves one of my favorites- shrimp toast.

I’ll generally go with anything Kung Pao, Sesame Chicken, or General Tsao’s. I’ll sample chicken fried rice as a measure of restaurant quality. If that dish sucks, they take short cuts with everything else. If its awesome, so is everything else.

Hot Pot if on the menu.

Dim Sum if on the menu.

Won Ton soup is great if properly done.

So are “Soupy noodle bowls”. Few places will have the soupy noodle bowls on the menu, but have all the ingredients to make the dish. First discovered this in Chinatown in San Francisco many years ago. Stopped into a random place to get an eggroll or two for a snack, saw this lady cooking the soup, two chinese dudes eating the soup, so I tried the soup. It wasn’t on the menu that the owner gave me. This is a huge bowl that is the size of a bowl of pho if done properly.

ETA: Thin round egg noodles instead of the rice noodles used in pho.

yuuup, Mandarin duck that is fried crispy and served with a brown sauce.
