Bear - never again. Very gamey and greasy.
Had some bear chili that was probably the best chili I’ve ever had.
Then again, chili covers a lot of gaminess.
I’ve had some beaver steaks that were delicious.

I eat a lot of game meat and usually take the hearts/livers as well. Tongues if the critter is big enough.
Beaver was probably the best.
I made pate with squirrel livers. It was pretty good but squirrel livers are small so it took a lot of them.
Had horse, ostrich, kangaroo, bear, woodchuck, coyote, mountain lion, bobcat, nutria, and raccoon. Coyote is the only one I wouldn't eat again. My freezer is usually full of venison and wild pork. Deer hearts are one of my favorites.
I've been on quite a few canned "hunts" in Texas through work. Got to eat audad, black buck, eland, kudu, and wildebeest.
Nothing really exotic but quite a bit that's unusual.

There’s a YouTube channel where a guy cooks the same part of the animal from every animal he could find to buy.
I’ve watched the brisket episode and the wing episode.
On the brisket episode he was even cooking things like camel and coyote brisket.

Horse, puffin, shark, whale,
All Icelandic specialties. Appreciating rotten shark meat required lots of alcohol, after several bites and shots it tastes like good brie!

I've had kangaroo tail soup, chocolate covered ants and baby bees, fried grasshoppers and snails, all from Pier One. They used to have a food section back in the day.
My dad would try all kinds of things. We had eel and clams out of Lake Pontchartrain. The eel was skinned, gutted and grilled. I wouldn't recommend the clams at all - not good eats.
Had goat cooked by my Pakistani neighbor.

Balled Eagle.
It tastes like a cross between a California Condor and a Spotted Owl.

I have a co-worker who grew up in China and would eat farm raised dog. It was common back in the 80's apparently when food was scarce.
Which breed is the most delicious?
Asking for a friend of course.
