The best taco is the taco I am eating at the time, but my serious answer is a straight up al pastor as well. Runners up are lengua and chorizo.

Depends on the place I visit but typically it's al pastor or carnitas.

Great carnitas are hard to beat imo.

Ok, here it is.



Tacos al pastor


Ingredients (already doubled)

2 cups pineapple juice
1/2 cup olive oil
3 oz achiote paste (THE most important ingredient)
2 tablespoon adobo sauce
8 chipotles in adobo sauce
1/2 tsp salt
1 even tsp cinnamon
1 even tsp tsp ground cloves

DON'T OVER ADD THE CINNAMON AND CLOVES

1 tbsp oregano
1 tbsp cumin
1 tbsp chipotle chili powder
1 tbsp garlic powder
3/4 cup white vinegar


This produces a fair amount of marinade. Marinade anywhere from 12 to 24 hrs. Try not shake off too much of the marinade before grilling. I use bone in pork steaks. I use bone in because they're usually less fatty than the smaller bone removed style. I also trim away a fair amount of fat as well.

After I grill the meat pieces, i chop it up with a cleaver.

I think you'll like this recipe alot.
