I’m not gonna nominate this as “best” because I learn towards some of the tacos already posted, but I enjoy recreating this taco made by Urbanos (since closed) called the Cubano.
Ham, pulled pork, rotisserie corn, mango salsa, and queso fresco on corn tortillas.

That sounds delicious. My best type of tacos are probably blackened redfish/red snapper, al pastor and a smoked beef cheek taco.

It's hard to argue against al pastor because of the history & presentation. I love the shwarma style vertical roasting spit stacked with thinly sliced-marinated pork and the pineapple on top but, the best best tacos are tacos de birria con consome.
Stewed-marinated lamb served with the rich cooking liquid for sipping or dipping the taco into. They are by far my favorite.
