I live on the North end of Black River Lake. Hope to see you sometime.
I can't think of any other state in the nation, that you would find a region home cooking rivalry. I enjoy cooking, and have learned a lot from the food snd drink board.

The family had a farm outside Opelousas, I think a couple of his brothers and sisters worked resturants in Laf if I remember right. It was a big family. One of his sisters was a good friend of my grandparents, as was Tony Chacheres family.
I think Paul traveled around the country to hone his skill's before becoming head chef at Commanders
Paul is the baby of 13 kids. When his last sister left home, Paul had to help his mother in the kitchen and that is where he first learned to cook.
I would say Acadiana has the best home cooks because cooking a big meal at home for the family is completely ingrained in our lives from day one. Plus men cook as well or better than women here so the family meal is usually a shared task between husband and wife.
But the real reason I say Acadiana is home cooks here can make just about anything. My Cajun Grandmother made a homemade lasagna that was restaurant quality.

I come from a long line of Cajuns and the women revel in their ability to "out whine" the others. It's almost like a sport. Some Jewish friends say they have the same problem.

Give them a chance.. Cajuns don't only cook Cajun.. Overall, people from Lafayette are very cultured and very well traveled. Start by going to Festivale Internationale.. Apr 25th..

I have found, in my many years on this earth, that tastes are as individual as people are.
Ask anyone from Ville Platte where the best food in the world is cooked, and they will say Ville Platte. Ask anyone from Avoyelles Platte where the best cooks are and they will say Avoyelles Parish. (The folks from these areas are not shy about pounding their chests.)
I have eaten in all the areas presented in this thread and do not have a clear preference.
They burn roux everywhere.

My grandmother was the farthest from a whiner you will ever meet...She lived a hard life and I NEVER heard her complain.
My mom is also one of the most demure women on the face of the earth and will put everyone else's needs before her own (until lately- in her old age she's finally learning to enjoy herself!)
But clearly you have your beliefs in what all 'cajun' women are like...

I'll take my food from the Bayou Region any day over other areas of the state. The cajun style down here with seafood and wildlife is great. I really do not like the creole style of New Orleans.
