Chicken Piccata sandwich. Let the brown butter/caper mix solidify in fridge. Spread that over bread, thin chicken cutlets, and paninni that. Yum!

Peanut butter and banana sandwich in between Eggo cinnamon toast waffles. The diabetes was totally worth it.

Not really a sandwich but......... As a kid(my dad did this to)we would take a fresh slice(or half)of Bunny bread and wrap it around cracklins, dip in cane syrup and eat. The sweet and salty was a perfect match with the fresh tender bread and crispy cracklin.

Red Beans and rice on a piece of buttered bunny bread is probably my favorite non-traditional sandwich.
One that isn't really that uncommon that I like is a french fry poboy with gravy.
And like other have said I like a good Thanksgiving sandwich. Parkway makes a great Thanksgiving poboy

Johnson's in Lafayette makes a delicious boudin burger.

Pork-chop sandwich, dijon mustard, mayo, maybe a piece of greenery.
Leftover chicken fried steak w/mayo on white bread, add fresh ground black pepper. Best when the meat is left cold from overnight (or 2 or 3) in the fridge.
