What meat do y’all use for cheesesteaks

Steakumms on a whim, but you gotta soak all the extra grease off them on paper towels when they come off the pan.
Leftover rib roast after Christmas is pretty damn good too.
ETA- I have worked at four different Philly Connections in my youth, all of their steak came labeled as "beef chipped steak" which you can probably google. I do know there was some proprietary marinade they were packed in, I have no idea what was in it.

I use ribeyes. Put them in the freezer for about an hour then shave super thin with a good knife. I've used sirloin before but the fat content in the ribeye I think makes it a better choice.

In these Let's Go Brandon meat prices Era I use Angus chuck steak. Plenty of fat.

you can kind of understand why folks from Philadelphia are so angry when their city's culinary claim to fame is street meat sandwiches with cheeze wiz over them.
I love em, though. I use whatever cheap steaks I can find in the reduced for quick sale section. I partially freeze and then shave thin with my meat slicer.

Yep
eta: when I make them at home I shred pepperjack or provolone and throw it into the meat right as it's finished. Melts in nicely and almost creates a gravy. Then mix in your onions and peppers that were sautéed. Money.

I used to like steak umms until I saw this:

It is certainly not traditional, but when I am making it at my house and want good food, I grill normal ribeyes medium rare then slice. I will do this on the blacktop and cook onions and peppers on the side then toast rolls and combine with cheese. Far from traditional cheesesteaks that normally use cheaper beef... but they are delicious.
Also if cooking for a lot of people I have made them with ground beef and had good results.

Most Asian markets sell thin sliced ribeye for shabu-shabu thats perfect for cheesesteaks.
