We don't usually bring anything out to the parade route, but for in the morning I like a Scrambled Egg Casserole and maybe add sautéed onions, bell peppers, mushrooms and jalapeno peppers.

I’m taking out my 4 qt jambalaya pots, one for Jambalaya, one for crawfish étouffée, Still thinking what to use it for. Thinking about using it as a fryer. Thoughts right now is to Fry Cajun egg rolls, or poppers wrapped in egg roll paper, something easy to wrap and fry.

Bringing red beans and rice, but every year I look forward to a rice dish a lady from South America brings to the party. I don't remember what she calls it, but its got rice, chicken, peas and tons of olives in it. I love olives.
