Shotgun red was a good dude who could cook. Another one that died recently was Daddy Jacks cooking with the blues that was good. Current favorite is Jean Pierre, thought they can be kinda long.

I love watching vincensos plate.

Can’t beat Kenji Lopez-Alt’s YouTube channel. He’s also the writer of The Food Labs, a very well respected textbook-style cookbook. Highly recommended
