Increases the nutrition content of the rice and makes it more resistant to pests during storage. It’s an American invention and probably has saved many, many lives over the years. It’s not trendy among foodies, but population wise it’s a great thing.
I bought 25 pounds at Sams last month. TulaneLSU stocks up at Sams and Walmart

I use the zatarans parboiled at home regularly. Its harder to screw up as it doesn't turn gummy as easily of normal rice. Does have a different texture though so that can turn some off to it.

Parboiled rice has a different texture. That’s why many people don’t like it compared to regular rice. Is it bad? No. It’s just a preference thing. If you don’t like it, you don’t like it and that’s ok. But there’s idiots out there who try to shame you for using it because they like to be the holiest of rice cookers. Personally, I never use it, but could care less if someone else uses it.

Cooked some night before last.
Good as any other rice

Is it a no no for Cajun dishes?
Posted on 4/1/20 at 8:41 am to dstone12
The irrational (in my mind anyway) hatred of parboiled rice on this board is a little odd.

Definitely not trying to shame anyone, but I really don't like it. It'll do in a pinch but I definitely prefer regular rice. It's a texture thing for me. Parboiled can never get to that true fluffy rice that I love. But I have family members that use it and I eat it when they cook it.

The people who don’t use it will say yes. The ones who do, don’t care, lol. On TD, yes, they will tell you it’s a no no for Cajun dishes. In reality, who gives a Frick? Really.

Restaurants like to use parboiled because the grains separate and don't stick much. They think it looks better.
Also, if you're holding a dish for a long time under heat, the rice holds up better and doesn't deteriorate as quickly.

In mind mind, it's very similar to those claiming that they're able to tell the difference between a $50 wine and a $20 wine, or, able to tell the difference between different vodkas.
In reality, in a blind taste test, I'd bet most rice connoisseurs would not be able to tell the difference more often than not.

It’s for catering companies to make shitty “jambalaya”

This is why I use it. I have both at home and really just depends on what we are cooking.

There's absolutely a discernible, texture difference in the rices. I could tell blindfolded. That being said, I'll eat it. But I prefer regular rice.

It wasn't for Paul Prudhomme. He used it in his jambalaya.

Parboiled rice and pasta are for goons that can’t cook a real jambalaya

I use it as well for Creole jambalaya.
Never ever would I use it in Cajun jambalaya
