I quarter the tomatoes and onions then cold smoke them for a few hours, adds a lot to the flavor. I am reticent to give out a recipe because the main ingredient is extremely variable. Sometimes they're meaty and sweet, sometimes they're watery and not much flavor, so I use some Cento canned tomatoes to bolster the flavor.

You fill this with pellets, applewood, hickory, pecan, Academy has a nice selection, light one end with a blowtorch, it will burn and produce smoke for 10=12 hours. I place it under the deflector plate, the temp in the smoker never gets over about 100F. You don't want to hot smoke because the fat will melt and the bacon will render. This works well for bacon, sausage, lox.

Working on baking Po-Boy bread. Initial tests are promising, but we'll likely get a Corona vaccine before I perfect this Po-Boy bread recipe.

I've been baking baguettes for years, but I think you can only recreate the light crusty poboy bread in a commercial oven.
