What can you do with ground lamb?

I see ground lamb at the store everytime I get my bison. I like to try new things. What can I do with ground lamb?

Sautee it with onions, tomatoes, and zucchini. Let it cool to room temperature.

Put the mixture in phyllo dough with chickpeas and feta cheese and bake in the oven for 20-25 minutes.

Greek Meatballs w/ nutmeg and coriander and such

Oak Oven over by house makes meatballs using these types of spices and they are unreal

You can also sauté it with garbanzo beans or chick peas and a bunch of middle eastern spices.

Sauté a little minced onion. Brown one pound ground lamb. Add one bottle of Raos. Season with any good Greek seasoning mix. Add a couple of handfuls of fresh spinach. Cook stirring until spinach fully wilted.

Serve over rice or pasta or a bed of spinach.

Gyro? Can mix with beef to make it as well.

Oh you gotta do kebabs with that ground lamb. Take the meat and mix it with parsley, garlic, a little lemon juice, middle Eastern spices, salt and pepper and form the mixture around the flat kebab skewers, making the shape of a hotdog. Grill those dudes with some fresh pita and a good yogurt sauce. Money.

I've got plans to pick some up this week so I can make a lamb ragout over fusili. I've found lots of great looking recipes online that I'm excited to try.

I absolutely love lamb but I've never cooked it so I thought I'd start with ground so I could ease into it. Here's to hoping I don't frick it up
