For Red Beans & Rice I actually prefer those two- what I consider lesser quality- sausages.

Otherwise we have a couple of local butcher shops that have some great ones.

The Verons or the Martain sausage is the best for Jambalaya.

Both times I used it and cooked for a crowed I didn't have any jambalaya left over. People tore it up and I got a lot of compliments

Oak Grove Smokehouse on Old Jefferson in Prairieville is the best sausage this side of Lafayette IMO. This is one of the few sausage makers in the area that still smoke their sausage instead of steaming it and adding smoke flavoring. And for an extra 10 cents a pound, they slice it for you. (Great for large quantities)

D&J's Grocery in St. Amant. They have good Andouille as well when you can catch them with it.
