What brand sausage for Jambalaya

What Brand of sausage do you use in jambalaya?

I think that sausage is a regional issue. Here, you cant find better than Conecah (sp) but we dont have the same brands as you may have avaialble.

Unless my fat bro-in-law brings me a load of sausage from the Mowata Stoe, I'm stuck using Richard's or Savoies.

richards is my favorite commercial made easily available brand, but just about any home smoked is better

I really like Double D. It has good flavor, and it seems to stay softer and moister than other types. I like to use good LaPlace andouille, too (Jacob's or Bailey's).

I always pick up freshly smoked sausage and tasso when I go back to Mamou. The big brands just don't compare for me.

I use some Jacob's with Richards which is our best available commercial brand we have up here.

Savoie's mostly. I don't like sausage that has a heavy smoke flavor for my jambalaya so while others may taste better they aren't my first choice for jambalaya.

Conecuh is awesome sausage, especially on the grill.
But I don't like it in jambalaya for some reason.

Easy choice in New Iberia...Simoneaud's. Up here I have to go to Maxwell's and use Italian. Not as good.

I usually get smoked sausage from Don's or best stop if I'm in town. Allot of times ill stock up on sausage and stuffed pounce when visiting the parents in ville Platte.

IMO,the best jambalaya sausage is Verons mild, or the spicy if you want a little kick. Not too smokey, well seasoned, it's good cold or hot.

I'll second a couple of opinions already posted.
Verons if available and then Richards for locally in the BR area for commercially available. If LaPlace is an option, Jacobs is without question your best option.
