I didn’t finish my bacon challenge dish until 3am this morning and I didn’t even eat it. So tonight I’ll be having my bacon wrapped Anaheim peppers stuffed with bacon/pimento cheese

Spatchcocked a little bird, green beans with the smoked trimmings from the whole spares, leftover slaw and tater salad. It ain’t real fancy but it’s my wife’s birthday and she was happy. May have been the cake. :)

Homemade?
Yes, one of two or three we make.
Thousand Island Dressing
(Makes 2 cups)
Ingredients:
1 cup Mayonnaise
1/4 cup Chili Sauce – Hinds 57 brand is usually in the Ketchup section at Grocer
2 Eggs – Hardboiled and finely chopped
2 Tablespoons Green Bell Pepper, finely chopped
2 Tablespoons celery, finely chopped
1 1/2 Tablespoons onion, finely chopped
1 Teaspoon Paprika
1/2 teaspoon salt
Directions:
Prepare and mix all ingredients together.
Keeps for 2-3 days in the refrigerator in a sealed container.

Comeback Dressing
1/2 cup good Mayonnaise
2 teaspoons Dijon or yellow mustard
1/2 cup Ketchup
1 teaspoon lemon or lime juice
2 teaspoons Worstershire sauce
2 teaspoons paprika
1 teaspoon black pepper
2 teaspoons Lawry’s garlic salt
1 Tablespoon Capers
Mix all ingredients in a sealable bowl and refrigerate until used – will keep for a couple of weeks under refrigeration.
Shrimp Dressing
We also cut the mayo by half on the comeback recipe, double the ketchup and add 1-2 Tablespoons of Horseradish (To taste) For boiled shrimp.

Been a while and did Ruffinos. Grilled oysters, Caesar salad, fish Katie, bbq shrimp pasta, creme brûlée, and a bottle of Cabernet. It was actually very good.

Got married young, I was only 30. Been married 34 years. Hell, I can barely tolerate me and she’s still around. Guess I’m stuck with her! :)
