Mississippi pot roast, brown rice, sautéed broccolini, and green beans.

Did a smoked pork loin on the Bull with some peas and blueberry salad.

Baked chicken thigh (yes, one, and I’m sure my doctor will still bitch because it wasn’t a breast). Roasted Brussels sprouts, drizzled with some aged balsamic. Crisped up the chicken skin and used it as a crunch element for the sprouts. That’s certainly not approved, but I don’t waste parts.

I had Cornish game hens.
This was 40 minutes covered then I left the lid off for about 10-15 to brown.

Pretty simple, shrimp and a some snapper chunks along with Okra. I did use some bonito flakes in my stock which added quite a bit of flavor.

Elk was for dinner. Traded oysters for Elk back strap and ground elk. Had burgers and backstrap wrapped in maple bourbon bacon on the grill. Delicious
