Can’t guarantee authenticity, but it is Thai inspired and delicious. Red curry coconut milk soup. Fried garlic on top.

Got the last of the tomatoes and tomatillos from my garden this weekend.



Turned them into salsa.


Had leftover wagyu tri tip from this weekend.


Figured I may as well combine the two.

Anytime I cook curry Thai, I try to use kaffir leaves to boost the authenticity score.

That would've required a trip to a specialty store and this was a spur of the moment idea. I had shrimp. I pretty much always have coconut milk and I had red curry paste in the fridge. I had a lime that needed to be used while there was still juice in it. Had fish sauce. No cilantro. No fresh ginger.

I meant to comment on that last dish in your dinner post last night. It looked so good! (Can't recall what it was.)

Ditto. If you don't have a local asian grocery store like H-Mart near, you can order them from Amazon and they keep pretty well in the freezer.

They may be listed as "Makrut" lime leaves instead of Kaffir, since kaffir has been deemed "problematic."
