I think I can officially name this my favorite type of wine.. if I had to commit to one.

Those short ribs look phenomenal. I don't think mine ever get that dark. Damn.

Day late red beans and rice, French bread and Luke cab followed by Banshee cab.

First time cooking red beans. Best I’ve ever eaten, and I usually over critique my own cooking.

It's her favorite. A little too astringent for me as a varietal but I like it in blends.

Seared hard on all sides in avocado oil and butter. Set aside and cooked down a sliced onion, deglazing with wine as needed, until nice and caramelized. I did them in batches like I would for French onion soup. Added a few cloves of crushed garlic, then added the ribs back, covered with wine and stock, added fresh thyme and rosemary, then to the oven at 325 for about 2.5 hours.
