Day 2 of freezer only meals. Stuffed chicken breast, leftover cheesy potato casserole, leftover broccolini with shaker parm and a squeeze of a lemon

It’s a total southern pinterest recipe
20oz bag hash browns (I like diced)
1 can cream of chicken
2 cups shredded cheddar
8oz sour cream
1/4 cup chopped onion (I just use trinity from the container)
Seasoning of choice (I did umami seasoning, garlic powder, onion powder, and a Cajun seasoning)
Mix all together. Top with more shredded cheese. Bake until golden bubbly.
I feel like I had melted butter in the mixture too but doesn’t seem to be necessary.

Thanks! I'm always looking for new quick and dirty sides. Think I could use cream of mushroom instead of the cream of chicken?

Threw some chicken in the oven, left over green beans and canned creamed corn. I promise I can cook more than I show in the supper thread. :) Been dropping a few pounds, with the ribeye being our weekly splurge. I’m thinking maybe late January, I can have some fried seafood. Been since March. :(
