Chicken Shawarma. Ignore the crummy salad. I forgot to get good spring mix today so we had to just put some iceberg for a leafy green :facepalm:

Chicken Shawarma
Marinate 2lb boneless skinless chicken thighs in :
1/2 cup olive oil
6 cloves garlic (minced)
3 tsp kosher salt
1 tsp cumin
1 tsp coriander
1 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp turmeric
1/4 tsp cinnamon
Marinate overnight. Just prior to cooking, slice an onion and toss it into the marinade. Sear chicken in a large nonstick skillet over medium high heat until well browned on both sides. Remove from pan and cut into smaller pieces, return to pan, cover, and continue to cook until cooked through. Times vary but from start of sear to ready to eat should be approximately 15 minutes. Maybe a little longer.
