All week long, I either grill or bake chicken, lean pork or fish and serve with some sort of vegetable. Sometimes we have some boiled shrimp, crabs, etc. Once a week I give my wife a steak for putting up with me. :) Tonight was her steak night.

As good as that looks, I never understood salting the outside of the potato. I would still love to eat it!!

We had boudin from my favorite boudin place. Me T’s in Elton. I have had boudin from all over and I always pick up a few pounds for the freezer when we go through.

If you oil and salt the outside of the potato before baking, you get a crispy, tasty skin.
