Afternoon folks!

I made some pineapple chicken in the instant pot (super basic) and made a bowl with rice cooked with some salsa, black beans, jalapeño sauce & avocado

soaked red beans, sausage, tasso, zatarins red beans mix, water. This is the simple crcok pot recipe I use that always comes out fantastic. It’s kind of hard to mess up crock pot red beans when you do something simple like this and you can change the meats up to your liking.

You can also add thinly diced veggies. (Trinity)

Homemade roast beef poboys here tonight.
Warmed the French bread in the oven then made the sandwich, dressed with shredded lettuce, tomatoes, mayo and yellow mustard.





As a little lagniappe from yesterday ....... a rack of ribs from yesterday.

I do a pack of beans, 1lb sausage, and tasso.

I don’t soak the beans. You can if you want but I do it for the easy/simple way

Add 6 cups water to pot, add beans and turn on high. I brown sausage, trinity veggies, and Tasso in pan and dump that into pot. Add garlic powder, onion powder, 2 bay leaves, a little salt and pepper. Leave on high for 4-5 hours and they’re perfect to me

If you're going to be using the stove for browning anyway, remove the browned sausage/veg/tasso and pour the 6 cups of water into your pot you browned everything in while it is still hot so you deglaze. Scrape really well to get it all off the bottom and then dump into the crock pot.

Browning and dumping without deglazing means you left all the good flavor from browning behind, rendering the browning step almost useless.
