It's cold out so I'm making meatball stroganoff. Pairing it with pre-made garlic bread.

All of us (at one time or another) look at ourselves and adjust lifestyle and actions based on what we see in the way we live. Like others, I used the days leading to the celebration we call the New Year and decided I had to make changes. I was following a lifestyle that was entirely too healthy. It had to change and I chose food as the first thing I would address. So, tonight I had:

Vegetables with an excess of hidden valley dip.



Panera Shrimp Chowder from Sam's with buttered crusty bread.





and a serious portion of health additives



Dang it, I can do this, and I will do this!

Bronzed Redfish filet over garlic mashed taters. W lemon butter capers sauce . Side of green and yellow squash smothered.

Basically a Chinese Green Bean recipe but I added spicy diced tasso, extra garlic and a lil Cajun seasoning. They were delicious and had a spicy Cajun kick.
I thought for sure they would bother me during the night but didn't. I used two pounds of green beans and I'm sure I'll be making them again real soon.

I thought I'd add the recipe if you're interested in trying it.


INGREDIENTS
1 lb fresh green beans
vegetable oil cooking spray or 2 tablespoons peanut oil
1 teaspoon ginger root, peeled, minced
1 garlic clove, minced
2 tablespoons water
1 tablespoon soy sauce
1 teaspoon cornstarch
1/2 teaspoon brown sugar
1/2 teaspoon sesame oil
1/4 teaspoon crushed red pepper flakes
Cajun seasoning

DIRECTIONS
Wash beans, trim ends and remove strings.
Arrange beans in a vegetable steamer (or a colander that will sit nicely in saucepan), and place over boiling water.
Cover and steam 5 minutes.
Drain and plunge into cold water, drain again.
Coat a large nonstick skillet (or wok) with cooking spray or peanut oil and heat until hot.
Add ginger root and garlic and saute 30 secs.
Add beans, saute 5 minutes.
Combine 2 tablespoons water and remaining 5 ingredients.
Stir well.
Add to beans, cook 30 seconds or until thoroughly heated, stirring constantly.

I added about 3 oz. of diced tasso to the steaming liquid and when the beans were done steaming I removed the tasso and added it to the garlic and ginger. The garlic, ginger and tasso all got saute'd together before adding the beans. During the heating of the beans I added a lil sprinkling of Cajun seasoning.
