I am looking to have a great diet week. Baked chicken and greens all week. Lunch and dinner.

Tonight I will have 3 drumsticks and green beans. I'm not even cooking the greenbeans with bacon.

gonna be butterflying a chicken breast and grilling it. Putting one side on French bread with swiss and flattening it on the panini press. making a mustard/mayo sauce with secret seasoning and adding that to the chicken panini as well as lettuce, tomato, and avocado.

Side of pepper jack cheese its. Might cook some broccoli too since I haven't had any good veggies today. (Will eat broccoli as appetizer since that isn't a good match)

Will eat other half of chicken tomorrow for lunch probably the same way.

I am trying my hand at the lazy chile rellenos recipe the the pioneer woman has on her website. I bought the fresh Anaheim chiles and blackened and peeled them this afternoon. We will see.

It has enough eggs and cheese and chiles that it has to be good.

Turned out very tasty. I will experiment next time and add taco meat or chorizo. Overall, 7/10. Will make again.

I had a big lunch at Butcher downtown NOLA today that is still sitting heavy on me. I'm thinking a smoothie after while if I'm feeling better.

Yes, I recommend butcher cut pepper. Adds some good heat. If I'm really feeling it I'll cover the entire patty

I've tried it. I usually salt it too though.

Slightly undercooked red beans with rice and fried drum.

I hit it out the park with the drum and made up for the al dente beans.

rouses had split turkey breasts with the wing on
roasted at 375 for about 1.5 hours after rubbing with butter, then salt & pepper
steamed green beans sautéed with butter, onion and mushrooms
made a sauce of broth, butter lemon and capers
pretty damn good
