Hmmm . . . leftover hatch/poblano chili pepper, pork tenderloin stew that I made Sunday afternoon. Should taste even better tonight.

Kind of combined a bunch of "recipes".

Browned cubed tenderloin in Dutch oven with garlic, onions and a little flour thrown in toward the end.

Then, switched to a crock pot. Combined with diced sweet potatoes, carrots, more onion, the chilis, chicken broth, oregano, salt, pepper, and, honestly, a couple of other things I can't remember on the fly. Cooked on high for 3-4 hours.

ETA: Also had diced roasted tomatoes. And I roasted the peppers, then did away with skins and seed before throwing in the pot.
