Forgot to post yesterday but made this Sunday night took out Monday morning. Just had leftovers and some coleslaw tonight.

Chicken thighs a la japonesa
Sauteed green beans, baby potatoes, with garlic and dry parmesan medallions.
Japanese potato salad
Marinated fresh tomatoes
Green pinot noir from Willamette valley, aged with Peugeot key

Tamarind-tomato salmon curry with jasmine rice.
Recipe is here in case anyone is interested. Really good dish that's fairly simple to make. The only ingredient that most people won't have on hand already is the tamarind paste.

Bacon wrapped stuffed chicken breast. Stuffed with cream cheese, fontina, chopped sundried tomatoes, sliced shallot tops, jalapeno pepper dice & seasonings
Yukon gold potato spears cooked in the skillet with the chicken breasts
Radicchio leaves stuffed with goat cheese & fontina. Topped with balsamic & olive oil. Would have grilled, but it was pouring outside, so I used the broiler

We had baked potatoes.
Rubbed with bacon drippings then sprinkled with Maldon flaky sea salt and baked.
Mine........ topped with butter, butter braised mushrooms, sour cream, shredded cheddar cheese, crumbled bacon and diced green onions.
Sometimes simple and easy is really delicious!

Pan seared salmon,brown rice, baked sweet potato, and a mango salsa.

Stir fry. Blanched the carrots and broccoli and “velveted” the chicken and that made a big difference imo.

I roasted some vegetables and cooked some sausage. Not really cohesive, but still good.
