Skipped lunch so I ended up cooking early - grilled ribeye with sautéed mushrooms, creamed spinach and a loaded baked potato.

Homemade meatballs and red sauce. Caramelizing the onions for the sauce.

Cooked a corned beef brisket and made some Russian dressing and homemade purple sauerkraut for reubens.

Chili relleno filled with grilled chicken, black beans and onion. Topped with tomatillo salsa and cheese

Was left alone. Wasn’t gonna cook but I found some chicken thighs that needed to be cooked. A quick brine, pan fried in a cast iron skillet, added some fries, toast and slaw. It wasn’t bad. :)

Dinner at a friends. Hanger steak au poivre, fried potatoes, wedge salad and roasted okra. Peach cobbler for dessert. Not bad!

We do a Sunday night dinner a couple of times a month. Usually switch up cooking and hosting duties. Last night, I made the okra (it was just okay) and another neighbor made the cobbler from peaches bought yesterday at a fruit stand on the way home from the lake.
