I have never had caviar and for whatever reason I want some. I don’t mind spending some money if it is worth it for something good.

This was years ago, but a doctor friend hosted a few friends to try out caviar as none of us had ever eaten it before. It was expensive, but what she did was order real Russian sturgeon osetra and sevruga. I loved it; there's nothing quite like it but it's costly! If you really want to experience it, loosen your purse strings!

[edit] There are some things that I've eaten and still think about, and that's one of them.

Or start off slow and get some Louisiana. Choupique caviar. You can usually find a tin of it for under $20 at local seafood places. It’s a good intro and you won’t waste a ton of dough if you don’t like it

Go to a sushi place and order an Ikura. Its salmon roe, it's also my favorite thing to eat at a sushi joint.

The good stuff like Beluga is really good.

My wife would not touch caviar. She tried Beluga at restaurant that specialized in it and now she loves it. I have to tell her "Hey, that is not peanut butter you are eating on that pearl spoon".

There’s a Louisiana brand of bowfin caviar called Cajun Caviar. They sell it at Whole Foods for sure but also some local stores. It’s not quite as cheap as he mentioned though so he might have better suggestions.

It's ok. I had some at a fundraising event once.

I wouldn't pay market price for it.

Whole Foods or fresh market may have little tins that are between 40-80 bucks. Get some cream fraiche and mix with some tiny chives. Spread on some mini pancakes and top with a dab of the caviar. It’s delicious.

Wife and I had caviar at Grant Achatz place in New York for the first time a few years ago and fell in love. Bad caviar is bad, good caviar is amazing.

The first time I ever had caviar, real Caspian sturgeon caviar, was in culinary school. Only the eggs from the three types of sturgeon, Beluga, Osetra, and Sevruga, can be called Caviar.

I prefered the Osetrs we sampled. over the other two. It was milder and less 'fishy' than the Servuga and smaller with a firmer pop than the Beluga.

Paddlefish roe
Choupique roe
Salmon roe
Smelt roe
Are not caviar.

I love caviar cold and straight. The best party food I have ever had we bought at a specialty shop in Dallas many years back. It was black caviar, mixed into soft cream cheese. served alongside toast points.
