Is it wrong of me to say that I am actually glad Franklin isn't on the show?

I’m glad he isn’t. You can go on YouTube and search for Aaron Franklin and watch about 10 million videos dedicated to him and his craft.

The pastry season was only 4 episodes as well. Seems like the “niche” seasons are shorter

Yep! Just watched the whole season. The Texas episode and the South Carolina episode... could watch 10x over.

The open fire restaurant chef in Australia was a bizarre dude

Watched the Snow's episode last night and it was a really well put together show. I love Texas style BBQ and that show was awesome. Mrs. Tootsie is an icon.

Potentially a bit over-produced for me, but still a good watch. The clips from that Australian fire dude were like HD food porn, but that is one weird cat.

I thought the Ridley Scott episode was a bit blah, didn't even really touch on the food until the end, was only his background.

Kind of had to with him really only making one type of BBQ. I know he does turkey and chicken but you can only focus so much time on cooking a whole pig

Edit: Also, Ridley Scott makes movies, not BBQ

Does anyone know if Snow's is better than Franklin? I saw where Snow's was once again recently(2018?) rated higher in one of those Texas Monthly maps. Or is it the little old lady bias?

Franklin is better imo but both are obviously great. And yes Daniel Vaughn of Texas Monthly put snows ahead in his last list but tbh I think it’s just Franklin fatigue.

Our family prefers Snow’s. I get a headache after eating Franklin’s brisket. Part of the allure is the experience. If you like to talk to interesting folks waiting in line in Austin, go to Franklins. If you like that tiny, Texas town with the whole family working in the place, go to Snow’s. Go to both and see. Different strokes for different folks. If you go to Snow’s, do not turn your nose up at the pork steak.

pork steak

They had a bbq place in a gas station in the town I went to college in. I would always get the pork steak because it was the cheapest piece of meat they served. It was delicious and I loved it. I have not seen it offered anywhere since then. Is it the cut as boston butt?

No. First time we went to Snow’s, we are eating bbq at 9am and the owner brings some to us all to try. It was fantastic.

Just finished all four.

Didn’t really care for Australian guy.
Really enjoyed the one on Rodney Scott
I cried when hearing about the tough times Tootsie went through. What a tough old lady. A national treasure.

My favorite by far was the Mayan lady, Rosalia. Such a simple unassuming woman is now home to a pilgrimage site of sorts. Those cochinita pibil tacos look legit af.

Did they say which restaurant Rosalia made the tortillas for in Tulum?
