I made a big pot of chicken & sausage gumbo yesterday evening. It finished around 9:30-10 is when I cut the heat to it. Had planned to let it cool for a few hours and put it in the fridge, but ended up falling asleep.

Woke up just a minute ago and touched the pot, was still mildly warm. Just finished putting it on the fridge.

Is it still ok to eat after sitting out (covered) from 10pm-7am?

Thanks in advance.

UPDATE:
To make a long story short, my girlfriend moved in last weekend, we put her fridge in the garage, and used it for the 20cup gumbo pot. Apparently that fridge has been struggling... we just took the pot out to eat a bowl before the Saints game after unpacking and the fridge temp said 42degrees, and the pot which finished cooking at 10pm (yesterday), went into the ‘fridge’ at 7am (today), took out at 3pm (today) and the pot / chicken and sausage feels room temperature.

What say the experts? Good to eat?

TLDR: gumbo finished at 10pm, into a semi broken fridge at 7am next day, checked at 3pm , fridge says temp is 42deg and pot is room temp. Safe to eat?

Probably ok? I would tell anyone else eating a head of time so they can make their own choice.

Reboil it now?

It’s been in the fridge for over an hour at this point. To take it out and reboil it seems counter intuitive to me ?

Thought you still had it out. Personally I’d throw it out now

Point of reboiling is to kill the bacteria that started growing in there. But instead you put it in the fridge, bacteria will still grow in there

Depending on how much I had left in the pot, I would have one bowl and hope for the best, then go from there.

Without knowing the temperature of the gumbo @ 7:08 when you made this post, it is a bit of a challenge to recommend the proper course of action.

Pssshhh, you people are pansies. I would definitely eat it. As long as nothing is growing on it, I eat it. I never get sick.

Yup..... 9 hours, put it this this way.

My in-laws cook just about Sunday, we eat at 11-11:30 & most of the time my MIL doesn't pick up leftovers till 7PM. No one has died or got sick.

Eat it and don't think twice. When reheating it I would heat only what you going to eat.

Since you’ve already chilled it I would just keep an eye out for growth. If there’s none, bring back to a boil, simmer for 20 minutes and enjoy.

Test it by eating a couple spoonfuls and wait several hours.

Crank the heat up and boil for a few minutes. You'll be fine.

If it was still warm you are good. Even if it was room temp I’m sure it is still OK.

So many crazy statements here that as a microbiologist I just can't comment on. Is anything growing in it?

If we didn't get this question about once a week it would be a morbidly interesting subject to read. As it is I just cringe and think about foodborne illness outbreaks I have followed in the newspaper.

You do know you would file a lawsuit for unacceptable business practice (and likely win it) against a restaurant if they did what you are asking us to approve.

Having ranted for a while. I would ask that you please don't feed your gumbo to a young child, any elderly person or any health compromised person.

Since I am not there to be tempted to roll the salmonella, shigella or E coli dice by eating it I would say, "Have a great big bowl and continue eating your gumbo as long as you like. Let us know if you get the screaming shits."

Go in peace brother and God be with you.

You sound like a Howie Mandel pussy. It was out for 7 hours, it's fine.
